  • Peanut Butter
  • Soy Sauce
  • Coconut Milk – use the canned coconut milk, I use the lite version
  • Rice Wine Vinegar
  • Brown Sugar
  • Chili Sauce
  • Chicken
  • Onion
  • Garlic
  • Vegetable Oil
  • Salt & Pepper

Adding Veggies

A chicken stir fry is a great way to get dinner on the table fast and just use whatever veggies you have in the fridge.

  • Broccoli
  • Asparagus
  • Bell Peppers
  • Snap Peas

You can even mix up the protein, it doesn’t always have to be chicken. Pork works amazing in a basic stir fry.

How to Make Chicken Satay Stir Fry

  1. Sauce. Mix together your sauce. I like to use a liquid measuring cup and just mix the sauce together, so it is ready and waiting for me.
  2. Chicken. Dice up the chicken into bite sized pieces. Add to a hot skillet with the onions and cook for a few minutes to brown. Add garlic and let it cook for just about a minute, until you can start to smell it.
  3. Finish. Pour in the sauce and mix until everything is well coated. Let the mixture simmer for 4-5 minutes until it starts to thicken and the chicken is cooked through.
  4. Serve. Remove from the heat and serve over rice with chopped peanuts, and green onions or cilantro for topping.

Recipe Tips & Suggestions

  • Rice. Have your rice almost ready. This takes about 10 minutes once you start cooking, so time your rice accordingly. You can use long grain white rice, jasmine rice is delicious or you can use cauliflower rice if you want to keep things low carb.
  • Prep. Make sure to prep your ingredients ahead. This cooks very quickly over a high heat, so you want to make sure everything is ready and waiting for you.
  • Topping. I like to add a little freshness and texture with a stir fry. So I top with crushed peanuts and a few green onions, but you can leave them off or great creative with cilantro or lime wedges or whatever you like.
  • Veggies. If you are adding vegetables you just want to make sure they are cut about the same size. You can add them with the chicken to get the crisp tender.

Storage

Store any leftover satay stir fry in an airtight container in the fridge for up to 4 days. I store it over rice in individual containers, so I can just take out and reheat in the microwave for a quick lunch the next day.

Chicken Satay Stir Fry

Chicken Satay Stir Fry – all the flavors of your traditional chicken satay served on skewers, but in a stir fry form over rice as a quick and easy dinner!

Ingredients 

For the Sauce:

Instructions 

  • Whisk together all of the ingredients for the sauce until smooth. Set aside.
    1/2 cup Peanut Butter, 1/3 cup Soy Sauce, 1/2 cup Coconut Milk, 1/2 cup Chicken Broth, 2 teaspoons Rice Wine Vinegar, 1 tablespoon Brown Sugar, 2 teaspoons Sriracha Chili Sauce
  • In a large skillet heat vegetable oil over high heat. Season chicken with salt and pepper. Add chicken and onion to the hot oil, cook for 3-4 minutes until browned.
    1 pound Chicken, 1 tablespoon Vegetable Oil, Salt and Pepper, 1 small Onion
  • Add garlic and cook for 1 minute.
    2 cloves Garlic
  • Pour sauce over chicken. Stir and simmer for 4-5 minutes until it starts to thicken, and the chicken is fully cooked.
  • Serve over rice topped with chopped peanuts and sliced green onions.
    2 cups Cooked White Rice, Chopped Peanuts, Green Onion
