Chicken Lo Mein is perfect for busy weeknights, this easy recipe brings all your favorite takeout flavors to the table—no delivery required.

This recipe takes about 20 minutes to make and you can really mix it up however you like. You can use whatever protein you like, mix up the vegetables use, and even use different noodles. So it is something you will never get bored with.

What You’ll Need

  • Chicken – I like to use chicken breasts, but you could also use thighs. Alternatively you can use any other protein you like; shrimp, pork, beef, tofu
  • Oil
  • Garlic
  • Ginger
  • Soy Sauce
  • Vegetables – see notes below for the best vegetables to use. But you can use whatever you like.
  • Chicken Broth
  • Cornstarch
  • Sesame Oil
  • Brown Sugar
  • Noodles – see notes section for more details on noodles. But you really can use any kind of you have or like for this.

Best Vegetables For Lo Mein

In this version I use onions, carrots, mushrooms, and cabbage. But you really can use whatever you like! That is the beauty of making dinner at home and skipping the take out. You get to add what you like.

  • Broccoli
  • Bell Peppers
  • Snow Peas
  • Zucchini
  • Green Onions
  • Spinach

How To Make Chicken Lo Mein

  1. Brown Chicken. Heating the oil in a large skillet. Add the chicken, garlic, ginger and soy sauce to the pan and cook for a few minutes until the chicken is browned. Remove from the pan and keep warm while the veggies cook.
  2. Cook Veggies. Add in the mushrooms and onions and cook for a few minutes until they start to soften and are browned. If you are using other veggies, like bell peppers or broccoli that take longer to cook, add them now as well. After the mushrooms are cooked, add in the cabbage and carrots. They will cook very quickly.
  3. Sauce. Pour the sauce over the vegetables and mix it all together.
  4. Chicken. Add the chicken back to the pan, including any juices that are on the plate. Let the sauce coat everything together and thicken slightly.  
  5. Final Toss. Toss in the cooked pasta that you are using and mix it all together.

Recipe Tips & Suggestions

  • Noodles. For this recipe it is photographed with linguine noodles, because that is what I had. But you really can use anything! Lo Mein Noodles are obviously traditional and available in the Asian section of most grocery stores. But spaghetti, ramen noodles ore even any other Asian style noodle you can find works great.
  • Large Pan. It is best to use a large skillet for this. If you have a wok that works great! You want as much surface area as you can get so the meat and veggies cook quickly and evenly.
  • Everything Ready. This recipe comes together very quickly, so it is best to have everything chopped and measured before you start.
  • Get Creative. This is a great recipe to clean out the fridge. Use whatever veggies you have in the drawer. You could even use leftover meat and add it towards the end just to heat it through.

Storage

Don’t worry, leftovers of this are delicious the next day. Just like classic take out, you can eat it cold straight from the fridge with no judgement. Just store in an airtight container in the fridge for 4-5 days.

  • 8 oz mushrooms, thinly sliced
  • 1 small onion, finely chopped
  • 1 1/2 cup Napa cabbage, finely shredded
  • 1 cup matchstick carrots

Sauce

Instructions 

  • In a large skillet heat oil over high heat. Add chicken, garlic, ginger, and soy sauce. Cook for 4-5 minutes until chicken is browned. Remove from pan, leave any liquid or oil in the pan.
    1 Tablespoon canola oil, 1 pound chicken breasts, 3 cloves garlic, 2 Tablespoons ginger, 2 Tablespoons low sodium soy sauce
  • Add mushrooms and onions to the and pan and cook for 3-4 minutes until the onions are soft and the mushrooms start to brown. Mix in the cabbage and carrots – cook for 3 minutes.
    8 oz mushrooms, 1 small onion, 1 1/2 cup Napa cabbage, 1 cup matchstick carrots
  • Meanwhile whisk together the ingredients for the sauce. Pour over veggie mixture and bring to a boil for 1 minute.
    1/4 cup low sodium chicken broth, 1 teaspoon cornstarch, 1 Tablespoon sesame oil, 1/4 cup low sodium soy sauce, 1 teaspoon light brown sugar
  • Add chicken back to the pan. Mix until everything is well coated and the sauce starts to thicken.
  • Toss with cooked pasta.
    12 oz noodles
  • Garnish with sliced green onions to serve.
    2 green onions
