This Rotel Cheese Dip is a creamy, zesty party favorite made with melty cheese and spicy Rotel tomatoes. Perfect for game day, holidays, or anytime you need a quick crowd-pleasing snack!

Rotel Cheese Dip is the ultimate party dip that’s as easy as it is irresistible. It is meaty with plenty of melty cheese and zesty Rotel tomatoes it is a hearty dip that’s perfect for scooping with chips or drizzling over nachos.

When it comes to entertaining I can not get enough dips! Crockpot Queso, Crab Rangoon Dip, Baked Mexican Cheese Dip or Beef Enchilada Dip are just a few that I make on repeat. There is just something about a warm cheesy dip that gets people excited!

This Rotel Cheese Dip could not be easier to make! You really just start with making taco meat and then add cheese and tomatoes. You can make it ahead, have it in the crockpot, or make it on the stovetop and eat it straight from the pan. No judgement what so ever!

What You’ll Need

  • Ground Beef – I use lean ground beef but you could also use ground turkey or sausage like Hot Sausage Dip.
  • Taco Seasoning – a store bought packet works great or Homemade Taco Seasoning is a must in my pantry.
  • Rotel Tomatoes – for a spicier dip you can use the hot variety.
  • Velveeta Cheese

How To Make Rotel Cheese Dip

  • Brown Meat. Add the ground beef to a large skillet and cook over medium high heat, breaking apart until it is no longer pink. Drain away any excess grease.
  • Season. Add in the taco seasoning and mix until the meat is evenly coated.
  • Cheese. Pour in the can of Rotel tomatoes and the cubed Velveeta cheese, mix to combine.
  • Melt. You can leave the pan over medium heat, stirring every so often until it is melted. Or you can place in a casserole dish and bake for about 20 minutes until hot and melted. You can also add to a crockpot and cook over low heat for a couple of hours until completely melted.
  • Serve. Once the cheese has completely melted serve with your favorite tortilla chips.

Recipe Tips & Suggestions

  • Not a fan of ground beef? No worries! You can use ground turkey, sausage, ground chicken or you can leave it out if you want it to be vegetarian.
  • Make Ahead. This is a great dip to make ahead. If I am making it the day before, I will get to the point of adding the cheese and tomatoes, and then cover and refrigerate overnight. The next day you just need to heat to melt the cheese and serve. You can use the oven, stovetop or a crockpot for this.
  • Dippers. Fritos scoops are probably my favorite dipper for this as they are thick and hold up well to the meat. But your favorite tortilla chips, pretzels and even bell peppers are delicious. You could even use as a topping for nachos for an over the top treat.
  • Don’t like Velveeta? I get it, it isn’t for everyone. It melts so smooth and works great in recipes like this. But if you prefer you can use 8 oz cream cheese with 1 cup of shredded cheddar cheese for a very similar dip.
  • Dip to thick? You can add just a splash of milk if you need to thin out the dip a little.
  • No Rotel Tomatoes? This product is not sold worldwide, so if you live somewhere that doesn’t carry it, you can use salsa instead. It isn’t quite the same, but it will be close in a pinch.

Storage

Store leftover rotel cheese dip in an airtight container in the fridge for up to 4 days. You can reheat in the microwave, saucepan on the stove or in a crockpot. You may need to add a little bit of milk to thin it out when you reheat the dip.

Ingredients

  • Cook ground beef in a large skillet over medium high heat, breaking apart until no longer pink. Drain any excess grease.
    1 pound lean ground beef
  • Add taco seasoning and stir until the beef is well coated.
    2 Tablespoons taco seasoning
  • Add the tomatoes and cubed cheese. Mix until well combined.
    16 oz Velveeta cheese, 10 oz Rotel tomatoes
  • Continue to heat over medium heat, stirring frequently until melted and smooth. Or place in a casserole dish and bake at 350º F for about 20 minutes until melted. Or add to a crockpot and heat over low heat for a couple hours until melted.
  • Once hot and melted serve with your favorite dippers.
