This Instant Pot Spanish Rice is fluffy, flavorful, and ready in a fraction of the time! Made with simple pantry staples like rice, tomato sauce, garlic, and spices, it’s the perfect side dish for tacos, enchiladas, burritos, and more. Quick, easy, and delicious every time!
One of my favorite things about Mexican restaurants is the rice that comes with what you order. There is just something about it that makes it hard to beat. And now you can make it at home in just minutes! It is so easy to make, and uses ingredients I am sure you have on hand already.

Spanish rice is also known as Mexican Rice, or arroz rojo. It is a classic side dish made with garlic, onions, tomato sauce, and rice.
Making Spanish Rice in the Instant Pot is my favorite way to cook it. The rice comes out perfectly tender every time. There is no stirring or having to make sure the stove is at the exact right temperature. And the texture is just like you get at a restaurant.

What You’ll Need

- Long Grain White Rice
- Olive Oil
- Butter
- Chicken Broth
- Onion
- Garlic
- Tomato Sauce
- Chili Powder
- Cumin
- Salt

How To Make Instant Pot Spanish Rice
- Sauté. Start by setting the Instant Pot to sauté and it get hot. Add the olive oil and butter. Once the butter is melted and it is hot add the onions and garlic and cook for 3-4 minutes until the onions are soft.
- Rinse Rice. Meanwhile rinse the rice. Add the rice to a colander and rinse it well. This will help the rice become light and fluffy and make sure you don’t get the burn notice on the Instant Pot.
- Add Ingredients. Add the rice and everything else to the pot and stir to combine.
- Cook. Put the lid on, lock it in place, and ensure the vent is closed. Change to High pressure and cook for 3 minutes.
- Release Pressure. Once 3 minutes is up, let the pressure naturally release until it unlocks. Remove the lid and then fluff with a fork to serve.

Recipe Tips & Suggestions
- Salsa. For slightly different flavor you could use jarred salsa in place of the tomato sauce.
- Storage. It is best to serve this Spanish Rice immediately, but once it cools you can cover it or place in an air tight container and place in the fridge for 4-5 days. To reheat just place in a microwave safe bowl and heat until it is warmed through.
- Spicy. If you like it spicy you could add jalapeno with the rice or add cayenne pepper or even more chili powder to the recipe.
Serving Spanish Rice
You really can serve this however you would any other Mexican Rice. It is great with Fish Tacos, Chicken Fajitas or along Southwest Baked Chicken.
I also love it with Sour Cream Chicken Enchiladas or alongside something non-traditional like Oven Baked Pork Chops or even Baked Chicken Bites.
