This rotisserie chicken salad is creamy, flavorful, and loaded with simple, wholesome ingredients. It’s the kind of recipe that feels like a lunchtime upgrade but takes minimal effort to throw together.

I love making chicken salad for meal prepping for the week or when I need something fast for dinner. The shredded chicken pairs perfectly with celery, a little red onion, and a creamy dressing that can easily be customized to your taste.
You can serve rotisserie chicken salad on a croissant, in a wrap, or scooped over a bed of lettuce—however you enjoy it, this recipe is a go-to for busy days and effortless meals.

- Rotisserie Chicken – This recipe uses about 2 cups, or about half. You can double the recipe or save the rest for something else.
- Celery
- Red Onion
- Parsley
- Sliced Almonds
- Mayo – you can use all mayo or all Greek yogurt. I like the mix of both for a little tang, added protein but still creamy and delicious.
- Greek Yogurt
- Lemon Juice
- Dijon Mustard
- Garlic Powder
- Salt & Pepper


How To Make Rotisserie Chicken Salad
- Make Dressing. In a bowl whisk together mayo, yogurt, lemon juice, mustard, garlic powder, salt and pepper until smooth and well combined.
- Mix. In a large bowl add your shredded chicken, celery, onion, parsley and almonds. Pour over the dressing and mix until everything is evenly coated.
- Serve. From here you can store in the fridge for lunches all week, or serve immediately on bread, with crackers, in lettuce cups or however you like.

Recipe Tips & Tricks
- I like to use a mix of mayo and Greek yogurt for this, but you can use all of either of them if you prefer. I am not a huge fan of mayo, so the yogurt helps give it a slightly different flavor that I enjoy.
- You will use about half of a rotisserie chicken for this recipe. Save the other half for something else or make a double batch.
- Get creative with what you add to yours. If you like grapes or apples or craisins add them. If you want a different nut, go for it. This is just a method and a base for you to take and make it how you like.
- Shred the chicken. I find that when you shred the chicken, instead of chopping it, it gives the dressing more to cling to and just works better!

Storage
Leftover rotisserie chicken salad can be stored in an airtight container for up to 4 days. So it is great to make a big batch and have for lunches during the week or have dinner waiting on those super busy nights.
