These Slow Cooker French Dip Sandwiches are the ultimate comfort food! Super tender, juicy beef slow-cooked to perfection and served on crusty rolls. Top with melted cheese and serve with savory au jus for dipping that takes every bite to the next level!

If you’re craving a hearty, satisfying meal that feels restaurant-worthy but is surprisingly easy to make, Slow Cooker French Dip Sandwiches are the answer. With minimal prep, the slow cooker transforms a simple cut of beef into melt-in-your-mouth tenderness, perfect for piling onto toasted rolls.

This crock pot French Dip is perfect for any night of the week.  You put everything in the crock pot in the morning and when you come home, dinner is done!  So easy, just 5 minutes of work.  Plus the leftovers are amazing! 

Add gooey cheese and a side of savory au jus for dipping, and you’ve got a meal that’s sure to become a family favorite for weeknights, weekends, or game day gatherings.

How To Make Crockpot French Dips

  1. Prep Beef. Start by trimming any excess fat from your chuck roast. You want it to be marbled and have plenty of fat, that is how it gets so tender and juicy. But if yours has a large excess on the outside, you can trim that down.
  2. Add Ingredients. Add the chuck roast to the crockpot. Mix your beef broth with the rest of the ingredients together (minus the buns) and pour over the roast.
  3. Cook. Cover and cook on low heat for 8-10 hours.
  4. Shred. Once the meat is cooked and tender, use forks to shred.
  5. Serve. Serve the meat on buns with desired toppings. You can serve the liquid in the base of the crockpot on the side for dipping.

Recipe Tips & Suggestions

  • Instant Pot. You can absolutely make this in that Instant Pot. You can follow my Instant Pot French Dip that is more of a shortcut version with canned soup. Or you can follow this recipe with those instructions for time. But either way it works great!
  • Toppings. Get creative with your toppings. I included a few below as ideas, but melty gooey cheese is always a good idea!
  • Beef. Chuck roast is my favorite for this because there is enough fat that it stays super tender and juicy. But you do want to trim any excess fat. If there is any hard white fat, that will not melt as it cooks and you can throw that away.

Storage

Store leftover French Dip meat in an airtight container in the fridge for up to 4-5 days. You can reheat in the crockpot, on the stovetop or even in the microwave.

Freezing

Let it cool completely and store in an airtight container in the freezer for 4-5 months. Let the beef thaw in the fridge overnight, and then reheat in the crockpot on low or in a stockpot on the stove.

What Goes On A French Dip Sandwich

That is really up to you! You can keep it basic or you can really dress it up!

  • Top with Provolone or Mozzarella cheese. Place the sandwiches under the broiler to melt the cheese for a gooey and delicious sandwich.
  • Top with banana peppers and Sriracha if you like things spicy.
  • Add Sautéed Mushrooms and/or caramelized onions.

Slow Cooker French Dip

Tender pieces of beef in a delicious au jus sauce. Made in the slow cooker, so it is ready when you get home from a busy day
Prep: 15 minutes

Instructions 

  • Trim the roast of the visible fat. Place the roast in the bottom of the slow cooker.
    3-4 pound chuck roast
  • Add the rest of the ingredients (not including the buns or toppings) to the slow cooker. Cover and cook on low for 8-10 hours.
    1/3 cup low sodium soy sauce, 1 bay leaf, 3 whole black peppercorns, 1 teaspoon dried rosemary, 1/2 teaspoon dried thyme, 1 teaspoon garlic powder, 4 cups beef stock
  • Remove the roast, and shred or slice the meat. Return to the slow cooker.
  • Slice hoagie rolls. If using cheese, place a slice of cheese inside the bun. Fill with sliced roast. Top as desired. Serve with a small bowl of the broth for dipping.
