Tender strips of beef, colorful bell peppers, and a savory sauce come together in this easy Slow Cooker Pepper Steak recipe. A super easy dinner that’s full of flavor and perfect for busy weeknights!
Slow Cooker Pepper Steak is a must-make for anyone craving a hearty, homemade meal without a lot of work. It takes just a few minutes of prep, your slow cooker does all the work, and dinner is waiting for you at the end of the day.

It really doesn’t matter what time of year it is, life is hectic. But you want to have a comforting and tasty meal at the end of the day. This easy crockpot pepper steak is perfect because you just have to slice a few things, and then the crockpot does all the work and it is just waiting for you!
Plus you can easily customize it to your taste. I personally like to add the bell peppers at the end, so they still have a little crunch to them. But you can absolutely add them in the beginning and let them cook all day. You can add spice, you could even add more veggies. Totally up to you!

What You’ll Need

- Steak – you can use sirloin or flank steak
- Onion
- Bell Peppers – I used a mix of red and green, but any colors work
- Beef Broth
- Soy Sauce – I like to use regular NOT low sodium for this, as you need the flavor to get the sauce to shine.
- Cornstarch
- Worcestershire Sauce
- Ginger
- Garlic
- Brown Sugar
- Salt & Pepper
- Red Pepper Flakes – feel free to add more, this is not enough to give it actual spice

How To Make Slow Cooker Pepper Steak
- Slice Steak. Start by thinly slicing the steak. Depending on the cut, this can be a little difficult to do, so place it in the freezer for 20 minutes, just to firm it up a little bit.
- Arrange. Add the steak to the base of the crockpot and top with the slice onions.
- Make Sauce. In a bowl whisk together beef broth, soy sauce, cornstarch, Worcestershire sauce, ginger, garlic, brown sugar, salt, pepper, and red pepper flakes. Pour over steak and onions.
- Cook. Cover and cook on low for 6-7 hours, or high for 3-4 hours.
- Bell Peppers. During the last hour of cooking add the bell peppers and stir mixture. Alternatively you can add the bell peppers at the beginning if you don’t mind them being soft.
- Serve. Once the meat is tender and the sauce has thickened a little, serve over rice.

Recipe Tips & Suggestions
- Thicker Sauce. If you want a thicker sauce, you can mix 1 Tablespoon of cornstarch with 1 Tablespoon of water and mix in during the last 30-60 minutes of cooking. Switch the crockpot to high and it should thicken the sauce.
- Steak Cuts. You really want to pick a cut that works well with low and slow. I like Flank Steak, Sirloin, Stew Meat or even a Chuck Roast works great.
- Serving. I like this serve best over white rice, Instant Pot Jasmine Rice is delicious for this, it soaks up the sauce really well. But you could also do brown rice, quinoa, mashed potatoes or egg noodles if you prefer.
- Toppings. You can top with sliced green onions or parsley if you want a little bit of freshness to the dish. Or if you want a little crunch chopped peanuts or sesame seeds work great as well.

Storage
Store any leftovers in an airtight container in the fridge for up to 4 days. It does reheat really well and makes for great meal prep or lunch.
Freezing
Yes, this also freezes really well. Let the mixture cool completely and then store in an airtight container for up to 4 months. Let it thaw in the fridge overnight before serving. You can either microwave or heat on the stovetop.
