One of the best things about these Cheesecake Chocolate Brownies is how impressive they look with minimal effort. The cheesecake swirl bakes right into the brownies, giving each square a marbled finish that looks bakery-worthy. They are great for weekend baking, but worth of holiday party.

You can keep them classic as written, or customize them with fun additions like peanut butter chips, crushed cookies, or even a drizzle of caramel or raspberry sauce on top. Once you try these, they’ll definitely become a go-to for whenever you need a show-stopping treat!

How To Make Cheesecake Brownies

  1. Make Brownies. Add butter and chocolate to a microwave safe bowl and heat in 30 second intervals, stirring each time until melted and smooth. Beat in sugar and eggs until really well incorporated. Add flour, cocoa powder and salt and mix until the flour just disappears. Fold in the chocolate chips.
  2. Make Cheesecake. Using a mixer beat cream cheese until smooth. Add sugar, egg and vanilla and mix until incorporated and creamy.
  3. Layer. Pour about 2/3 of the brown mixture into a prepared pan. Spread into a thin layer. Pour the cheesecake mixture evenly over the top. Drop spoonful’s of the brownie mixture over the top of the cheesecake.
  4. Bake. Place in a hot oven and bake for 30-35 minutes until the brownies are set and the edges are just starting to turn golden brown.
  5. Serve. Remove from the oven and let the brownies cool completely before slicing. You can chill them to speed up this process.

Recipe Tips & Suggestions

  • Box Mix? You can definitely use a box mix for the brownie portion of this recipe. Just follow the recipe on the box for the brownie portion and layer with the cheesecake mixture as the recipe directs.
  • Pan Size. I use a 9-inch square pan to make this recipe. You could use an 8-inch pan if you prefer. The brownies will be thicker and require a little longer in the oven.
  • Brownies. If you have a Homemade Brownie Recipe that you love, you can also use that in place of the recipe listed.
  • Storage. Because of the cheesecake layer, you will need to store these brownies in the fridge. They will last for 3-4 days in an airtight container.
  • Perfect Cut. Cutting brownies can be messy. The best tip for getting a clean cut is to use a plastic knife. Also chilling these brownies first will help in cutting them easily. You can wipe off the knife between cuts if you want to have the clean cheesecake line.

Instructions

  • Preheat oven to 350º F. Line a 9-inch square pan with parchment paper or grease and flour well.
  • In a microwave safe bowl add butter and unsweetened chocolate. Microwave in 30 second intervals, stirring each time, until melted and smooth.
6 Tablespoons butter, 4 oz unsweetened chocolate
  • Add sugar, eggs, egg yolk and vanilla. Beat until fully incorporated and combined.
1 1/2 cups granulated sugar, 2 whole eggs, 1 egg yolk, 1 teaspoon vanilla extract
  • Add flour, cocoa powder, and salt. Mix until just combined.
1/2 cup all-purpose flour, 1/4 cup unsweetened cocoa powder, 1/2 teaspoon salt
  • Fold in 3/4 cup of chocolate chips.
    1 cup chocolate chips
  • In a separate bowl, using a mixer beat cream cheese until smooth. Add in sugar, egg and vanilla and beat until smooth and creamy.
8 oz cream cheese, 1/2 cup granulated sugar, 1 whole egg, 1 teaspoon vanilla extract

  • Remove from the oven and cool completely (you can place in the fridge to chill) before slicing to serve.
