Almond Joy Cookies are soft, chewy treats packed with sweet coconut, rich chocolate, and crunchy almonds. Inspired by the classic candy bar, these cookies are only 5 ingredients and super easy to make! Perfect for holidays, parties, or whenever your sweet tooth calls!

Almond Joy Cookies are a coconut lover’s dream. They combine the chewy sweetness of coconut, sliced almonds, and chocolate for a cookie that tastes just like your favorite candy bar. These cookies are easy to whip up and guaranteed to satisfy any sweet craving.

If you are familiar with Coconut Macaroons, then these will seem very familiar. They have added almonds and chocolate to give them that classic Almond Joy flavor. But the same concept as the old classic for a soft and chewy cookie that you can literally make in no time.

These cookies don’t require a mixer, are only 5 ingredients, and just so darn easy to make. It is perfect for those who don’t think they can bake, because they are super simple, but very impressive.

What You’ll Need

  • Sweetened Coconut Flakes
  • Sweetened Condensed Milk
  • Flour – not a traditional ingredient, but I like adding just a little to ensure the cookies really stay together and are soft and chewy. If you want them gluten free, you can absolutely leave this out.
  • Semi-Sweet Chocolate Chips – can really use any chocolate you like; dark or milk chocolate work great as well.
  • Sliced Almonds

How To Make Almond Joy Cookies

  • Mix. In a large bowl mix together the coconut, condensed milk, flour, most of the chocolate chips and most of the almonds (you are reserving some of each for topping). Mix until everything comes together and is well combined.
  • Scoop. Using a 2 tablespoon cookie scoop, scoop out balls of dough and place on a lined baking sheet. Wet your hands, shaking off excess water so they are just barely damp and kind of roll the dough into balls. You want to make sure they are pressed together or they will far apart when baking.
  • Bake. Place in the oven and bake until just golden brown. Remove and let them cool on the baking sheet.
  • Topping. Melt the remaining chocolate chips until smooth. Place in a sandwich bag and cut off the top. Drizzle the chocolate over the cookies and top with sliced almonds. Let the chocolate completely set up before storing.

Recipe Tips & Tricks

  • Lined Baking Sheet. You really want to use parchment paper or a silicone liner when baking these. The coconut will stick to a bare baking tray and will be a mess to deal with.
  • Different Nuts. Almond Joys are made with almonds, but if you want to use pecans, walnuts or another nut, go for it!
  • Shape. Getting your hands damp to help shape the balls of dough will help the cookies bake up well. They need to be pressed together with loose pieces of coconut mostly pressed into the cookie or parts will burn quickly while other parts don’t cook as quickly. Just make sure your hands are barely damp, not dripping with water.
  • Rising & Spreading. Given the ingredients in these cookies they will not change shape when they bake. So you don’t have to worry about them spreading on the baking sheet. When you shape your dough make them as thick or as thin as you want, as they will not rise or spread like traditional cookies.

Storage

You can store Almond Joy Cookies in an airtight container for up to 5 days. So they are great to make ahead! They can stick together when storing, so if stacking you may want to place a layer of plastic wrap or wax paper between the cookies.

You can freeze baked cookies in an airtight container for up to 3 months. Just take them out and let them thaw at room temperature before serving.

Ingredients 

Instructions 

  • Preheat oven to 350º F. Line 2 baking trays with parchment paper or silicone liners. Set aside.
  • In a large mixing bowl add coconut, condensed milk, 1 1/4 cup chocolate chip, 1/2 cup almonds, and flour. Mix until well combined and evenly blended.
    14 oz sweetened shredded coconut, 14 oz sweetened condensed milk, 1 1/2 cups semi-sweet chocolate chips, 2/3 cup sliced almonds, 1/4 cup all-purpose flour
  • Using a 2 Tablespoon cookie scoop, scoop balls of dough and place on lined baking tray.
  • Wet hands, shaking off the water so they are just barely damp. Shape the dough into balls pressing in any loose coconut flakes.
  • Bake for 12-14 minutes until golden brown. Remove from the oven and let cool on the baking tray.
  • Melt the remaining 1/4 cup of chocolate chip until smooth. Place in a sandwich bag or piping bag and cut off the top. Drizzle the melted chocolate over the cookies. Top with the remaining sliced almonds.
  • Let the chocolate completely set up before storing.
