It is the season of all the parties, get togethers, cookie exchanges, reunions, and everything else that involves food and drinks!  It seems like every day a new invite for something comes up. And as much as I love it, it can get stressful sometimes too.

So a simple and easy cocktail is a must! This Cranberry Mimosa is also sometime called a Poinsettia Cocktail, but it is just 2 ingredients, plus some cranberry for garnish. Can’t get much easier than that!

  • Versatile – you can personalize the ratio or juice to sparkling wine for each glass to make it your own and to your taste.

What You’ll Need

  • Cranberry Juice – you can use 100% Cranberry, Cranberry Cocktail, Cran-Cherry….whatever you have or like.
  • Sparkling Wine – see more details below on what to use, but I like a Brut for this.
  • Cranberries – optional garnish

How To Make Cranberry Mimosas

  • Fill – fill each champagne glass about 1/2 full with cranberry juice.
  • Top – Top off each glass with champagne to fill to the top.
  • Garnish – add a few cranberries (fresh or frozen) to each glass for garnish.

What Kind Of Sparkling Wine To Use

For something like this, you want to use something that you like drinking, but it is diluted with cranberry juice, so it isn’t something you need to spend a lot of money on. There are lots of brands out there, and anything under $10 will work great in this.

I like to use a Brut because the cranberry juice is sweet enough, that I personally think using Prosecco or Spumante makes it too sweet for me. But it is just personal preference, so if you like a sweet cocktail, and you have prosecco on hand, try it!

Recipe Tips & Tricks

  • Start with cold ingredients! You want your cranberry juice and your sparkling wine to be very cold. No one likes a room temperature cocktail!
  • Fresh or frozen cranberries work great for your garnish. So if you are like me and always have a bag from the previous year in your freezer in case of emergencies, break them out and let them help chill the drink.
  • Want to be extra festive? Rub a lime wedge around the rim of the glass and dip in sugar for a fun and festive look.
  • Make it kid friendly! Use sparkling apple or white grape juice to make this for the kids or anyone who just doesn’t want to drink alcohol.

Ingredients 

  • 3 cups cranberry juice, chilled
  • 1 bottle sparkling wine, chilled
  • 1/3 cup fresh cranberries, optional

Instructions 

  • In a champagne glass fill about 1/2 way with cranberry juice. 
  • Top with sparkling wine. 
  • Garnish with cranberries.
