S’mores Brownies – Rich, fudgy homemade brownies on a graham cracker crust topped with toasted marshmallows and bits of chocolate!
If you have met me or been here before, you know my favorite dessert is homemade brownies. Just basic fudgy brownies are my ultimate weakness. There are a ton of brownie recipes on the blog already. But in my world you can never have too many!

Years ago I made these S’mores Cookie Bars and they always disappear so quickly. So I decided to take the same idea, and make them with brownies. Rich, fudgy brownies on top of a graham cracker crust, that are then topped with toasted marshmallows, and more chocolate. It is seriously like heaven in every bite.
There is just something about S’mores that always wins people over. It may be the memories of childhood, or just the chocolate and gooey marshmallows. But it can be S’mores Cookies or even a S’mores Pie, but it will definitely be a hit.
What’s In S’mores Brownies

- Graham Crackers
- Sugar
- Butter – I always use unsalted in baking.
- Cocoa Powder – unsweetened cocoa powder is what I use. But Dutch processed will give you a darker chocolate flavor.
- Eggs
- All-Purpose Flour
- Salt
- Marshmallows
- Hershey Bars
You can use a store bought brownie mix to speed things up a little, but homemade brownies are really quick and easy to make, and I think they are worth it! Or have this Homemade Brownie Mix on hand at all times, so you can make brownies in just minutes.

How To Make S’mores Brownies
- Make Graham Cracker Crust. Mix together graham cracker crumbs, sugar and melted butter and then pressed into the bottom of your square baking dish. Bake the crust for 8 minutes.
- Make Brownie Batter. While the crust is baking make your brownie batter. You can use a box mix here if that is what you have. For homemade brownies mix together melted butter and cocoa powder until smooth. Beat in eggs and sugar until really well combined. Add flour and salt and mix until just barely combined.
- Bake. Pour the batter over the baked crust and then bake the brownies until they are done. It will take about 25-30 minutes. You want a tester to come out mostly clean.
- Toppings. Remove the brownies from the oven and turn on the broiler. Top the brownies with marshmallows and broken pieces of chocolate. Then put the pan back in the oven for 2-3 minutes until the marshmallows are golden.
- Cool. You want to let them cool before slicing or you will have a giant mess with melted chocolate and a gooey brownie. I know it will be hard, the smell is intoxicating, but you can do it!

Recipe Tips & Tricks
- Brownie Recipe. You really can use whatever brownie base recipe you want for these. A box mix, your go-to homemade recipe, or the one listed below.
- No Graham Crackers? If you are in a country that doesn’t sell graham crackers, you can use Digestive Biscuits, they are the closest alternative that I have found.
- Make Ahead. These brownies are great to make the day before so the marshmallows and chocolate topping have time to set up before slicing.
- Storage. S’mores brownies will last for 3-4 days when store at room temperature. Cover with foil or plastic wrap.
If you have a chocolate lover in your life, you need to make these s’mores brownies for them. They will forever be in your debt. I mean just look at that gooey, fudgy brownie! And if you really want a traditional S’more in the middle of winter try my Oven S’mores!

Ingredients
Brownies
- 3/4 cup butter, melted
- 3/4 cup cocoa powder
- 1 1/2 cups sugar
- 3 whole large eggs
- 3/4 cup all-purpose flour
- 1/2 teaspoon salt
Topping
- 2 cups mini marshmallows
- 2 Hershey candy bars, broken in pieces
Instructions
- Preheat oven to 350º F. Line an 8×8 inch baking pan with parchment paper.
- Mix together graham cracker crumbs, sugar, and melted butter. Press into the bottom of the baking pan. Bake for 8 minutes.3/4 cup graham crackers, 2 Tablespoons sugar, 3 Tablespoons butter
- Meanwhile, prepare the brownie batter. Mix together melted butter and cocoa powder. Add sugar and eggs, and mix until well combined. Mix in flour and salt until everything is well blended. Pour over baked graham cracker crust.3/4 cup butter, 3/4 cup cocoa powder, 1 1/2 cups sugar, 3 whole large eggs, 3/4 cup all-purpose flour, 1/2 teaspoon salt
- Return to the oven and bake fro 30-35 minutes, until brownies are almost fully cooked. Remove from oven and turn on the broiler.
- Top the brownies with marshmallows and broken pieces of candy. Return to the oven, and heat until marshmallows are golden brown (2-3 minutes). Watch carefully.2 cups mini marshmallows, 2 Hershey candy bars
- Remove from oven, and allow to cool completely before slicing.
